300g plain flour (or 200g plain flour & 100g almond meal)
1/2tsp baking power
220g caster sugar
2 eggs
150g blanched almond (or pistachio)
finely grated lemon zest (or grated ginger)

How to:
Preheat the oven to 160c, place baking sheet on a baking tray
Place all the ingredients in a mixing bowl, mix at low speed for a few minutes until the dough comes together
Turn the dough out on a lightly floured surface, divide into two halves and roll each half into a log about 30cm long
Place the logs on the baking tray and bake for 25 mins or until firm
Cool on the tray at room temperature for a few hours
Preheat the oven to 100c
Use the serrated knife to cut the logs into slices about 1cm thick
Place the biscotti flat on the baking tray and bake for 25 mins
