Frozen Tiramisu

Frozen Tiramisu with Kit Kat Crumble
Inspired by the recipe from

4 Egg yolks
¼ Cup Water
6 Tbsp Caster sugar
2 Gelatin leaves
240 g Mascarpone cheese
1 Tsp Vanilla extract
¾ Cup Whipping cream

Place the gelatin leaves in iced water and set aside
Whisk the whipping cream to a soft consistency then set aside
Fill a saucepan with a small amount of water and bring to a boil and then turn to a low simmer
In a bowl whisk together egg yolks and water. Add sugar and whisk well
Place the bowl over the simmering water and keep whisking until the yolk mixture reaches 75c then remove from heat
Remove the gelatin leaves from the water and squeeze out excess water
Whisk the gelatin leaves into the yolk mixture
Add mascarpone cheese and vanilla extract into the mixture and whisk until smooth
Gently fold the whipped cream into the mascapone cheese mixture using a spatula
Fill into a silicone mold and chill in a freezer immediately

Just before serving, place digestive biscuits in a zip lock bag and crush them into rough crumbs.
Cut Kit Kat chocolate bars into small cubes
Place the crumbs and Kit Kat pieces on a tray then remove the frozen Tiramisu from the mold and place them on the crumbs … Serve chilled
