{"id":96,"date":"2015-11-07T15:17:05","date_gmt":"2015-11-07T04:17:05","guid":{"rendered":"http:\/\/www.cakify.com\/?p=96"},"modified":"2025-04-06T12:21:15","modified_gmt":"2025-04-06T02:21:15","slug":"almond-biscotti-to-be-exact-almond-cantuccini","status":"publish","type":"post","link":"http:\/\/www.cakify.com\/?p=96","title":{"rendered":"Italian Biscotti (Cantucci)"},"content":{"rendered":"<p><strong><a href=\"http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-154\" src=\"http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti.jpg\" alt=\"\" width=\"1080\" height=\"1021\" srcset=\"http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti.jpg 1080w, http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti-300x284.jpg 300w, http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti-768x726.jpg 768w, http:\/\/www.cakify.com\/wp-content\/uploads\/2015\/11\/biscotti-1024x968.jpg 1024w\" sizes=\"auto, (max-width: 1080px) 100vw, 1080px\" \/>Biscotti (Cantucci)<\/a><\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>300g\u00a0 \u00a0Plain flour (or 200g Plain flour + 100g Almond meal)<\/p>\n<p>220g\u00a0 \u00a0Caster sugar (or 200g for recipes with chocolate chips)<\/p>\n<p>2\u00a0 \u00a0 \u00a0 \u00a0 \u00a0Eggs (lightly beaten)<\/p>\n<p>\u00bd tsp\u00a0 Baking powder<\/p>\n<p>150g\u00a0 \u00a0Whole almond with skin (or Whole peeled pistachio, or peeled walnuts)<\/p>\n<p>Optional:\u00a0 \u00a0Finely grated orange zest, chopped dried cranberry, dark chocolate chips, white chocolate chips<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Preheat the oven to 160c, place baking paper on a baking tray (Do not grease the baking paper!)<br \/>Place all the ingredients in a mixing bowl, mix at low speed for a few minutes until the dough comes together<br \/>Turn the dough out on a lightly floured surface, divide into two halves and roll each half into a log about 30cm long<br \/>Place the logs on the baking tray and bake for 25 minutes or until firm<br \/>Cool on the tray at room temperature for a few hours<br \/>Preheat the oven to 100c<br \/>Use a very sharp knife to cut the logs into slices about 1cm thick<br \/>Place the sliced biscuits on the baking tray and bake for another 20-25 minutes<\/p>\n<p>I personally like the combination of almond + dark chocolate chips + orange zest or pistachio + white chocolate chips + dried cranberry.
