This cake is so easy to make. Everything can be mixed in one bowl, either with or without electric mixer or food processor. If you can’t find buttermilk, you can just add a table spoon of lemon juice into fresh milk and leave it stand for about 10 mins or until the mixture looks like yoghurt. You can even replace buttermilk with plain yoghurt or sour cream.
This banana cake is light in both colour and texture, unlike most banana cake you often see.

125g Butter (soft)
275g Sugar
2 Large bananas (mashed + add a few drops of lemon juice)
1Tsp Vanilla essence
100ml Buttermilk (fresh milk + lemon juice) or plain yoghurt or sour cream
225g Self raising flour
1/2Tsp Soda Bicarbonate

How to:
Preheat the oven to 180c. Brush a round baking form (20cm) with melted butter or line the base and side of the form with non stick baking sheet
Place butter, sugar, banana, eggs and vanilla in a mixing bowl (or a food processor) and mix well
Add the buttermilk and mix well
Mix soda bicarbonate with flour and add into the mixture. Mix well.
Pour the mixture into the prepared baking form and bake for 45 mins.
Leave the cake to cool slightly in the form before removing it from the form and leave it to cool completely
Can be served with sweetened cream cheese or vanilla ice cream

  1. The easiest banana cake to make, just right for using up those very ripe bananas in the fruit bowl! I make this one in a loaf tin then you can cut slices and butter them for an after school treat.
